Hassawi Rice (Red Rice)

The undisputed star of the Al-Ahsa table and one of the world's most prized rices; grown in the oasis clay, reddish-brown, and rich in iron and fiber.

Details
It withstands Al-Ahsa's intense heat and is known for its firm grain and high nutritional value. Usually cooked with lamb or chicken and plenty of spices, onion and tomato, it needs longer cooking time because of its firm grain.

Al-Ahsa Mandi

Lamb or chicken cooked in a buried oven fired with palm wood, taking on a unique smoky flavor found nowhere else.

Details
The oven is fired with palm wood and trunks, and the meat is cooked directly above the rice pot so its fat and juices drip onto the rice, giving it a rich, indulgent flavor. A beloved dish for celebrations.

Al-Ahsa Harees

Whole wheat grains slow-cooked with meat (usually lamb) for long hours until they become a smooth, dough-like consistency.

Details
Once fully cooked, the harees is beaten with a special wooden tool (the midrabah) until the meat dissolves completely into the wheat, then topped with ghee when served. Tied to happy occasions and blessed days.

Sago pearls are cooked with caramelized sugar, water, ghee, saffron, cardamom and rosewater until translucent and set, then garnished with nuts.

Date-Seed Coffee

A heritage drink made from roasted date seeds, completely caffeine-free and rich in antioxidants, with a taste close to coffee and a natural hint of sweetness.

The seeds (often from Khalas dates) are collected, washed and carefully dried, then roasted in the mihmas until browned and finely ground. The powder is brewed with water and seasoned with cardamom and saffron, and served warm as a healthy coffee alternative.
